Antipasto roll-up

Try something different in your lunch-box with this healthy vegetarian wrap.

Preparation Time

5 minutes

Ingredients (serves 4)

  • 1/3 cup basil pesto
  • 4 sheets mountain bread (see note)
  • 75g baby rocket
  • 3/4 cup chopped marinated eggplant
  • 1/2 cup chopped marinated mushrooms
  • 1/2 cup chopped marinated artichoke hearts
  • 1/2 cup chopped semi-dried tomatoes
  • 100g feta cheese, crumbled

Method

  1. Spread pesto over bread sheets. Arrange rocket in a row along 1 edge of each sheet. Top with eggplant, mushrooms, artichoke and tomatoes. Crumble feta over vegetables.

  2. Roll up firmly to enclose filling. Secure rolls with kitchen string. Cut in half and serve.

Notes

Mountain bread comes in paper-thin sheets of wheat flour with added grains such as barley, rye, oats and rice. It has a dry, soft texture which also toasts well. Variation: For a non-vegetarian option, add sliced prosciutto or salami.
